If you find yourself asking, “What’s Seaweed Week?” or more to the point, “Why should I care?” Josh Rogers can explain. Seaweed Week is his idea, dreamed up to highlight the many virtues of seaweed and insert it into the consciousness of America as something of a superfood.
“Minerals are its biggest claim to fame, seaweed has 10 times more minerals than land plants, including minerals that are hard to find, like iodine,” Rogers said. “Seaweed has about 60 minerals, some in trace amounts. The big ones are iodine, potassium, iron and calcium, plus some of the weirder ones, like boron.”
